This recipe proves that you can make a delicious meal with basic ingredients. The potato flavor shines through with this dish, be careful not to over spice it.

Ingredients

  • 5 large potatoes, peeled and chopped into small cubes
  • 1 medium onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 750ml of vegetable stock
  • 100ml of milk
  • 35g of butter
  • 3 leaves of parsley

Method

  1. Step 1
    Heat the butter in a saucepan for a few minutes, until the butter is steaming.

    Add the garlic and onions, stir and fry for a further 2 minutes.

    Add the potatoes and add pepper to taste.

    Cover the saucepan with a lid and let it cook on a low heat until the potato is soft. This should take around 10 minutes.

    Remove the lid and add the stock. Turn up the heat to bring the mixture to a boil, stirring every couple of minutes.

    Reduce the heat and let the soup simmer for 10 minutes.

    Remove the soup from the heat and add the milk. Use a food blender to blend the soup until you have a creamy texture.
